The Best 2019 Dish goes to...

The signature dish of Christian Le Squer is, in a word, perfection.


With apologies to Jay Rayner who was having a no good, very bad day when he consumed this dish, I found this "onion soup" to be the single best dish I ate in 2019.


I'm already a sucker for a good onion dish. Here they are filled almost like a soup dumpling waiting to burst with flavours of liquid onion and parmesan. Utterly silky and coating your palate. The black truffle puree adding deep, rich elements of "broth" round out the plate.


This dish has been photographed, reviewed and blogged the world over, and for good reason. Frankly, I had never heard of it until it was presented to me. I would get on a plane tomorrow to have another serving.



To qualify for The Single Table awards, I had to visit that location in the given calendar year.
