The 2021 Best Dish goes to...

For the third year in a row, The Single Table Best Dish goes to a vegetarian plate. This year it's an accomplishment so unique, so technically driven, so balanced, that it was a hands-down winner.


On The Single Table's "100 Best Dishes I ever Ate" list, this stunner comes in at #10.

So your first though might be, this is an acidic bomb. Not so. The interplay of temperatures, savory, sweetness, umami, and yes, acid, make for a complex plate where each bite gets more interesting.


Components include: tomato tartar, green zebra granita, gazpacho, tomato water jelly and melted tomato puff pastry.


I remarked to the floor manager, this is a dish that should be studied and taught in culinary school for years as an example of how to focus on a single ingredient (within its family) and bring it to its absolute peak.


Maybe that's why The Single Table is in love with this single expression of tomato perfection.
