This award could go to a market without air con, entrails circling a cement drain and pungent and fragrant fruits any other year. But in 2019, The Single Table goes High Street and brings you to a sparkling market filled with luxurious and unimaginable products.
Les Halls de Lyon Paul Bocuse makes a Japanese department store 5000 Yen cantaloupe look like a Tesco Express.
(How's that for a deep cut?)
Formage aside....
and not discounting the pralines...
This market has most stunning en croutes I've ever seen. Perfectly formed. Studded with herbs. Mouth watering.
Would you like some jambon priced at 350 year per kilo?
Or the obligatory jiggly foie encased in shiny and translucent gelatin
Although it did remind me of a classic scene from The Office...
My eyes were immediately drawn to this display. I wondered how the foie would play with the sweetness of the fig. The lovely woman behind the counter saw my eagerness and offered a sample. Free sample? Yes please! The foie perfectly creamy and chilled. The fig almost syrupy, soft and melding together with the foie. A perfect confection.
Lyon is all Paul Bocuse, all the time, all over town. But if you find yourself in this charming city and just want to hit a Bocuse highlight, you must visit this market and cobble together an unforgettable meal from friendly vendors with world-best products.
To qualify for The Single Table awards, I had to visit that location in the given calendar year.
