I always crave visits to 2021 Single Table of the Year Pavyllon for Yannick Alléno's stunning cuisine and top-notch service. As you already know, seat T301 could be the best single-guest experience in the world and was reserved for yours truly. This is theatre at its best and never a dull moment. Every plate, garnish and flourish is on full display.
Any closer and you'd need an apron and a return call of "yes chef!"
Asparagus poached and kissed by the plancha with an appearance on the charcoal grill and a ginger sauce. A dish that needs perfect timing to elevate the flavours.
Delicate cheese soufflé with foie and albufera sauce. The control of the pepper is outstanding on a dish that's equally luxurious and light.
Pigeon with confit leg. On the side, Chef Alléno's told me this is his "favourite" part of the pigeon (mine too). It's a creamy liver spread.
Sugar free chocolate millefeuille with candied fruit. Seriously! Sugar free! Perfect flake. Decadent pastry cream.
